Raaka Chocolate makes its confection from scratch without roasting. The chocolate is handcrafted from bean-to-bar in Red Hook, Brooklyn. For those foodies interested in seeing how this is done, the company offers tours and chocolate making classes. We took one of the classes over the weekend which was not only informative but lots of fun!
During Raaka’s tours which lasts about 45 minutes, you’ll learn how bars are made from unroasted beans (unusual in chocolate-making). This apparently better preserves the distinctive flavor of raw cacao. Keen chocolate lovers can take a two-hour class, which includes a tour and hands-on lessons in bean-to-bar chocolate.
